Sometimes, small comforts can brighten a gloomy day. Try these oven fresh cookies, with hints of Jing Si black tea. With it’s lightly sweet flavor and crisp-on-the-outside-but-chewy-on-the-inside texture, they’re the perfect accompaniment to a hot cup of coffee or tea. See our recipe, courtesy of Ethan Chang, and put some pep in your step!

Ingredients

1 c sugar

1 tbsp vanilla extract

8 tbsp unsalted butter (or your preferred vegan alternative)

2 c flour, separate

10g Jing Si Black Tea-Machine Picked

recommended tools: blender or food processor, cookie cutters

Directions

  1. Preheat oven to 350°F.
  2. In a microwave-proof bowl, microwave butter for 1 minute. If not using a microwave, heat butter till softened but not too liquidy.
  3. Add in sugar and vanilla extract. Mix with fork or whisk. Stir in flour. Fold dough to incorporate.
  4. In a blender or food processor, shred tea leaves. Add to mixture and fold in with hands or fork.
  5. Lay out dough and flatten to ~3/4″ thickness. Using cookie cutters, a knife, or the rim of a small cup, cut out desired shapes. Reshape leftover dough and repeat till done.
  6. Layout cookie onto lined baking tray, setting slightly apart.
  7. Bake for 10 minutes. Cookie bottoms should be golden brown and tops should be lightly golden. Enjoy!

A Message From the Chef

What I learned from creating this video recipe is that natural light looks much better than artificial light; background music is extremely important and affects how long your video feels; when making a cooking video, it is important to zoom in on your hands and what you are doing; other things being left in frame are distracting. It is important to keep your camera stable, as a shaky camera makes your video seem very unprofessional. It was an insightful learning experience I was glad to have.
